A visually striking late nineteenth-century vegetarian cookbook by Eduard Baltzer, one of the central figures in the German Lebensreform movement and an early advocate of plant-based diet reform in Europe. First published in the mid-nineteenth century and here in its substantially revised 13th edition, the work was intended for “Freunde der natürlichen Lebensweise” (“friends of the natural way of life”) and reflects the growing popularity of vegetarianism before the turn of the century. Recipes emphasize practical household cooking built around grains, vegetables, legumes, soups, potato dishes, porridges, salads, sauces, and simple desserts, alongside coffee substitutes and other staples of reform-minded domestic life. An appealing survival from the formative period of organized vegetarian thought, with exceptional shelf presence from its original decorative binding.
